Comfort Food! Chichen Soup Recipe

Nothing like a homemade warm bowl of chicken soup!

That time of the year for comfort food. This is one of my favorites. Chicken and rice soup. Recipe below. Fill large pot of water. take skin off and rinse 4 bone-in chicken breasts. Rinse 1 stalk of celery( take from the core of celery, with leaves), add some salt, pepper, bit of thyme. add 12 oz. bag of cut, cleaned carrots. Bring to a boil, then simmer for about an hour. Remove and toss celery, cut up 3 of the cooked breasts. Remove cooked carrots and mash. Put chicken, carrots, salt, pepper, and about 1 tablesoon of thyme, add 1 cup long grain white rice. Cook for 15 minutes. Since chicken doesnt always give the richest of broths, i add 32oz. of Cento low salt chicken broth. I cut up the 4th breast and add chopped celery, mayo, salt and pepper for chicjen salad. Enjoy! #comfortfood #cento #fall #cravingcomfortpk
